Black
Pepper
Indigenous to India,
pepper - rightly called the King of Spices - is one of the oldest and
best-known spices in the world. India has always reigned supreme in
the production and export of this most exotic spice.
Black pepper, which is prepared by drying the mature green berries,
is a major spice with varied applications in processing industries.
It is used in a wide range of foodstuffs, particularly in meat products.
MAS black pepper has excellent medicinal properties, too.
Easily the finest in quality anywhere, Indian pepper is grown in the
monsoon forests along the Malabar coast in South India.
A combination of natural advantages and organic farming techniques produces
bigger, better-shaped, more aromatic and flavourful peppercorns in this
region.
Two of the most celebrated commercial varieties of Indian black pepper
are 'Malabar Garbled' and 'Tellichery Extra Bold'. MAS exports both
these grades.

Green Pepper
MAS dehydrated
green pepper is prepared from unripe but fully developed peppercorns,
which are artificially dried.
The peppercorns, dried under controlled conditions, retain their natural
green colour and farm-fresh flavour.
MAS dehydrated green pepper is a specialty product with distinctive
characteristics and subtle flavour. The spice is highly popular as an
ingredient of instant soups and dry-meals. It is also used in the manufacture
of cheese, pates, sausages, meat and egg-based foods.
Green Pepper in Brine
These premium quality light green pepper berries, after removing all
contaminants and other foreign particles, are kept in a brine solution
for about 45 days till the berries are matured.
Besides other applications, green peppercorns in brine are used for
making sauces and purees and in the food service sector. The catering
sector specially utilizes this product for making green pepper steaks.
It is also a popular pickle by itself or mixed with other spices/vegetables.
